Reduction of food waste in the Dutch hospitality sector

Project description
In September 2012, Q-Point started a project in cooperation with the Royal Burgers’ Zoo, financially supported by Agentschap NL. The project aim was to reduce food waste in the hospitality sector.

The first step was an analysis of consumer behavior, food consumption, number of visitors etcetera in relation to food waste in the zoo. The next step was optimization of processes and procedures within the four restaurants at Burgers’ Zoo.  With this experience, the project successfully expanded to Apenheul and the Emmen Zoo. Food waste was 75% lower, whereas the same turnover was achieved with 28% less purchase.
